Kale & artichoke pie

It’s not pie. It’s not quiche. It’s not a fritatta. I don’t know what it should be called, but it is so good!


I made it this morning (recipe here) because I have so much kale and I don’t know what to do with it all.

Who has another good kale recipe?

    This reminds me of Spanakopita, and I love that. But, this is much easier! Thank you.

  3. Here is a great kale salad – super good with some grilled chicken, shrimp or salmon. Best thing is you can dress the salad for dinner and the leftovers won’t be soggy for lunch.

    I use a bit of anchovy paste to give the dressing some body and I toast the panko crumbs before using.
