Post-vacation salad

I just got back from yet another vacation. Look at me, livin’ the life… No, this is the last one until God knows when. Anyway, “vacation,” in my book, roughly translates to “eat and drink as many delicious things as you can.” So while we were in Bethany Beach, Delaware, we indulged in Dickey’s Frozen Custard, Fisher’s popcorn, happy hour at Mango’s, dinner at Rusty Rudder, dozens of crabs, breakfast at The Frog House, DB Fries and so much more. Phew!

SO tonight for dinner, I made this yummy salad for dinner:


Not just saying “yummy” because I made it; I really did think this was a good salad. It had spinach, kidney beans, black beans (low-sodium, of course!), scallions, avocado, and a shredded cheese (only a little, this is a healthy post-vacation meal, after all). I bought a rotisserie chicken too because it was on sale (and because it’s easier than making chicken). Oh I made dressing (EVOO, red wine vinegar and Dijon mustard), and it emulsified quite nicely.

    That looks and sounds good. A pre cooked chicken is always nice so you don’t have to turn on your oven and heat up the house.
