Chicken avocado quesadillas

January 28, 2013 by Emily Pergament

What’s a girl to do with leftover chicken and various cheeses and tortillas in the fridge? Make quesadillas, of course! But first, go buy an avocado.

I used large tortillas, pre-cooked chicken, cheddar/jack blend and string cheese, and cooked on the stove in a pan for about six minutes on each side. They were delightfully crispy, but I wish they were spicier. Next time, we’ll get some salsa or hot sauce to add, or use pepper jack cheese.

What do you make with leftover chicken?

I keep a jar of sliced jalapeno peppers to add to things that need a kick. Those would be perfect in this. Looks really yummy!
