….but trying hard to cut calories? I made up this delish alternative today using what I had on hand. OK, not everyone has canned artichoke hearts “on hand” but I had just used some in a salad so I happened to have some extra. Anyway, I took a handful of raw spinach (enough to fill a cereal bowl), and a a few chopped up artichoke hearts. Threw them into the microwave for 45 seconds or so, long enough to heat and wilt the spinach but not turn it into complete mush. Then I simply sprinkled it with parm cheese and some pepper. Yum. It scratched that craving itch without busting the calorie count for the day. I would definitely use this as a side dish or as a whole meal if I was eating alone.
