So, in the original post announcing the recipe contest, I said Rob and I would make up to five of the dishes. We did, but we had two more entries.
The first, is from Rob’s mom Anne. It’s a lemon garlic chickpea dip from Rachael Ray. It looks super easy and healthy and delicious, but you have to make the entire thing in a food processor, which we don’t have! Once we have our food processor (which, oddly enough, is sitting in her basement), we will be making and enjoying this dish.
The other submission was from Julie. Hers is a twist on the old spinach artichoke dip. She uses it, mixed with cherry tomatoes, as a topping for pasta. See her blog entry about this dish. Julie suggests using spinach artichoke dip from Tastefully Simple or Trader Joes. I fully intend on guiltlessly eating this as a full meal after the wedding and honeymoon.
